Canton Liberty Fest Bake-off Recipe

Pumpkin Pie - Ingredients:

4 eggs, beaten
1 29 oz. can, pumpkin
2 cups packed brown sugar
2 tsp cinnamon
1 tsp. nutmeg
1/2 tsp cloves
2 tbsp flour
1 tsp salt
3 1/2 cups evaporated milk
2 9' pastry shells unbaked

Combine eggs and pumpkin, mixing well.  Blend in sugar, spices, flour and salt - mix well.  Pour in to pastry shells.  Bake at 425 degrees for 15 minutes, then reduce heat to 325 degrees and bake for an additional 35-40 minutes.  Pie is done when a knife insrted into ceter comes out clean.  Cool.  Store in refrigerator.  Serve with whipped cream.
